We eat Carnitas (Mexican fried pork) all the time, but always pick it up at a good Mexican grocery/taqueria. I found 20 oz packages of carnitas at Costco and wanted to give it a try for a cool day, not sure what I was going to make. I searched the pantry and put this together. It’s got a little heat to warm you up.
Carnitas Chipotle Bean Stew
Ingredients:
- 1 20 oz package of carnitas, or pick up fresh at a local taqueria
- 1 onion, finely sliced
- 2-3 tablespoons Olive Oil
- 2 cloves garlic
- 1 large can Italian Tomatoes
- 2-3 chipotle peppers, chopped finely (canned with Adobo sauce)
- 1 can White Beans (or black if that’s what you prefer) (drained and rinsed)
- 1 can Garbanzo Beans (drained and rinsed)
- Grated Cheese, your choice cheese
Steps:
Microwave the carnitas for 2 minutes and then drain some of the fat, set aside. (You can also do this on the stove top, this is for the pre packaged Carnitas.)
Saute onion in the olive oil over medium heat until they turn golden brown, add garlic and saute a minute longer. Add the tomatoes, breaking them up, and the chipotle peppers, simmer for 20 minutes. Add the carnitas and beans and cook at least another 10 minutes to heat through. Serve with grated cheese.
***You can add cumin when you add the garlic, and cilantro when serving. Also good with some guacamole. Serve with chips, rice or tortillas.
